Delicious Holiday dessert: Upside Down Apple Fruit Cake

Christmas in India is called "Bara Din" or the Big Day. It is celebrated in a big way especially by the Catholics, Protestants, Syrian Orthodox Christians and Anglo Indian community of India. Many goodies are cooked and baked around this time. One of the favorite desserts is the Christmas fruit cake.

My recipe for fruit cake is a modified version and I also use apples to make the cake like an upside down apple cake. Here is my recipe for upside down apple fruit cake for Christmas

Upside down apple fruit cake

Ingredients

Dry mix

1½ cups all purpose flour
1 tsp baking powder

Wet mix

4 eggs
1½ sticks unsalted butter
2 tsp vanilla extract
2 cups sugar

Fruit filling

1/8 cup dried cranberries
1/8 cup raisins
1/8 cup cashews
1/8 cup dates (pitted and minced)
¼ cup candied pineapple bits
1 cup Mott's Apple sauce
1 apple (cored and cut into thin slices)

Directions

Preheat the oven to 325 F. Sift the flour and baking powder in a sieve and keep aside. In the blender jar break the eggs (both whites and yolks) and whip them. Add vanilla and cold butter making sure to cut the butter sticks into pieces so that it mixes properly with the eggs. Whip for a couple of minutes till the butter is nice and soft. Next add the sugar to the mixture and whip till it forms a dense, homogenous mixture. Pour the wet mixture into a large bowl. Slowly add the dry mixture to the wet mixture making sure to fold it in using a spatula. Add small amounts at a time till all the dry mixture is folded in. Add applesauce and fold into the mixture.

Line a baking tin with 1 tsp butter and sprinkle some flour over the butter. Arrange the apple slices in the base of the pan. Arrange them in whorls till the entire base is covered by the apples. Pour the cake batter on the apple layer. Next add the dry fruit pieces like cranberries, raisins, cashews, dates and pineapple bits. Bake at 325 F for 1 hour and 10 minutes until a knife inserted into the cake comes out clean. Cool the cake for 10 minutes after baking and then turn it over on a plate. The apple layer comes on top and your delicious upside down apple fruit cake is ready.

Serving: Serve warm with whipped cream and a cherry on top!!!!!
